Grouper:

Grouper led an unusual and somewhat schizophrenic life. Like shrimp, groupers are females at birth, but experience a sex change later in life. Before they die, most will have been both a mother and a father. These fish are masters of disguise, able to successfully blend into their surroundings. Groupers are heavy-bodied fish with large mouths.

There are numerous grouper species inhabiting temperate and tropical waters worldwide. You will find other groupers in the market with slightly different tastes and textures among them, but generally they are white-fleshed, lean, and fairly bland tasting.
